Vegan Lavender All Butter Biscuits

I am not vegan, but am conscious that we all need to make some changes to save our precious planet. Recently I’ve had lunch with some vegan friends who inspired me to try some new recipes which although I was initially sceptic, once tried, I found better than the original versions and super easy too like these Lavender All Butter Biscuits, Felafel and Banana Cake recipe.

I love lavender. In addition to having a wonderful fragrance you can use in wardrobes and draws, it is also edible and has calming properties. I have a lovely plant in my garden but if lavender but if you don’t you can substitute it with the same amount of raisins or poppy seeds. 


200 gr plain flour

50 gr self-raising flour

100 gr sugar

1 heaped tbsp of cornflour or potato starch

2 tbsp of lavender

1 tsp vanilla extract

150ml sunflower oil

small pinch of salt

Baking paper and baking tray size of approx. 21x 29 cm

A Simple Method

Chop the lavender roughly with a knife. Whizz the flour, sugar, lavender a pinch of salt and cornflour (or potato starch) in a food processor to sieve and mix briefly, then add the vanilla and drizzle the sunflower oil slowly, pulsing the food processor blades until you get a soft, golden dough. 

Heat the oven to 180C/160C fan/gas 4 and line a baking sheet with parchment or a baking mat. Spread the dough over the tray using the back of a spoon and bake for 15-20 minutes until golden brown. Leave to cool then cut fingers of approx. 3 cm to share with friends and family.
